Meet The Baker

Hi, Iā€™m Zoe ā€”

Baker, lifelong crafter, and a believer in dessert for breakfast (and, of course, breakfast for dinner).
Layers of Lemon began as a daydream during slow mornings filled with sweet kitchen experiments, and itā€™s grown into a traveling dessert cart built on joy, sourdough, and celebration.

After years in the bakery world ā€” and a personal journey toward more nourishing food ā€” I fell in love with sourdough, not just as a technique, but as a living, magical ingredient. While I love baking classic sourdough loaves, I longed for more playful, celebratory ways to bring fermentation into the sweet, filled pastry world I adore.

I began experimenting with fermented cookies and cakes, searching for ways to reduce sugar and processed ingredients without sacrificing joy. I didnā€™t want to follow the latest health fad ā€” I wanted desserts that felt good and tasted incredible. Food that was worthy of celebration.

Sourdough taiyaki felt like the perfect pairing: golden, whimsical, and endlessly customizable. Traditionally a symbol of good luck and celebration, taiyaki is now the heart of my cart ā€” made fresh on-site or pre-baked and nestled into your charcuterie setup, always filled with love.

My batter is fermented for 4 to 12 hours and made with oat milk for creaminess, eggs for fluffy structure, raw local honey for just the right sweetness, and a few extra nourishing touches. These treats light up my spirit with every bite ā€” and I hope they do the same for you at your next event. From taiyaki to charcuterie spreads to celebration cakes, I bake with ingredients I feel good about serving ā€” so you can feel good about enjoying and sharing them, too.

Beyond the batter bowl, Iā€™m a lifelong maker. I love weaving, crocheting, coloring, and turning tiny details into something meaningful. Every piece of Layers of Lemon ā€” from the menu designs to the coloring pages tucked into zines ā€” is made with care and creativity.

My hope is simple: to help you celebrate life sweetly, in every season.
